Ganache can be made out of almost any chocolate, including white chocolate which contains no chocolate. I prefer to use chocolate with a minimum of 70% cocoa mass, which provides a much richer taste in the product than a less intelligent chocolate.

I use chocolate produced for the baking and candy industry that comes in small disks or lozenge shapes. This chocolate doesn’t need to be chopped or grated before using. If you start with bar chocolate, you’ll need to chop it before weigh
