Red leather banquettes. Lots of chrome. Ginormous sundaes. Coffee from thick white cups … in truth, our salad is a world away from this sort of diner. We make ours with fried tofu but you’ve got to know that it is great with maple-drizzled bacon. I loved living in the States: fantastically kind people, and every kind of treat: Big Gulps, Wendy’s, sourdough pretzels and whole supermarkets of organic produce!
