Method

  1. Spoon the mixture in dollops, using about 2 tablespoons for each puff, onto the prepared baking sheet, leaving a few inches between each one. Bake the meringues until lightly colored, about 30 minutes. Turn off the oven and prop open the oven door about 1 inch (2.5 cm). Let cool completely in the oven before serving, about 2 hours.
