This style of curry does not include coconut milk, as it comes from the northern part of Thailand where coconuts don’t grow. If you’re not a strict vegetarian, use Asian fish sauce in place of mushroom soy sauce.

  • Vegetable broth, ¾ cup (6 fl oz/180 ml)
  • Mushroom soy sauce

  1. In a glass measuring cup, mix together the broth, soy sauce, lime juice, and brown sugar; set aside.
