This recipe is an ideal way to use leftover cooked rice. In fact, leftover rice is preferable to fresh, yielding perfect, separated grains when stir-fried. For a milder flavor, use broccolini instead of the Chinese broccoli.

Ingredients

  • Vegetable oil, 2 tablespoons
  • Garlic, 1 tablespoon finely chopped
  • Fresh ginger

Method

  1. In a wok or large, deep sauté pan, warm the oil over high heat. When the oil shimmers, add the garlic and ginger and stir-fry until aromatic, 10 seconds. Add the Chinese broccoli, onion, and mushrooms, and stir-fry until the onion is tender, 3 minutes.
  2. Push the vegetables to the side of the wok and add the rice, letting it cook for 30 seconds without stirring.
