Posole is traditionally made with long-simmered pork and dried hominy. This meatless version is equally delicious and comes together in a fraction of the time, thanks to the use of canned hominy.

  1. In a Dutch oven or other large, heavy pot, warm the oil over medium-high heat. Add the onion and carrot and cook until just tender, 4 minutes. Add the garlic and cook until fragrant, 30 seconds. Add the chipotle chiles, cumin, oregano, and chile powder, and sauté for about 10 seconds.
