My husband Dave and I have visited there on vacation several times, and our ritual when we land at the airport never wavers. We catch a ride into town, drop our bags at the hotel, and walk directly around the corner to Restaurant U Provaznice (a.k.a. The Rope-Maker’s Wife) for a plate of schnitzel and red cabbage. I am wondering what the carbs are? I can only have 30 for an entire day.

The only carbohydrates in this recipe are in the cabbage and the apple, so it's very low-carb. It makes 2-4 servings, so each serving has only 1/4 to 1/2 a Granny Smith, which is low in sugars.
