Method

To a Béchamel sauce, only partly cooked, add a pinch of saffron and a little curry powder. Cook as usual; the quantity of saffron is rather a question of taste, but in any case the flavour of curry powder should not be overpowering. It is the happy blending of spices which makes the sauce perfect.
