I never seem able to cut one of these fluffy sweet breads, but normally rip it limb from limb in the passenger seat of the car while driving home from the shops. However, at more restrained moments I achieve this gentler treatment.

Ingredients

  • 1 slice panettone
  • 1 large egg
  • 2 tablespoons milk

Method

Cut yourself a slice of panettone. Combine and then vigorously beat together the egg and milk in a bowl, creating a good froth.

In a pan, heat the butter. When it is hot and foaming (but it must not be smoking), dip the slice of panettone in the eggy mix on both sides and flop it in the pan, frying it gently and flipping it when golden. (Make sure the panettone doesn’t spend too long in
