Fennel is a magical vegetable, with many medicinal merits as well as delicious recipes to its name. With the tops cut down and the short stalks sticking up, the bulb almost resembles a heart and valves, heavy, firm and white, a clean heart, helping digestion, preventing gout and purifying the liver, help I certainly need or will.
