When I remember the taste of this tart, the first thing that pops into my head is not the eye-rolling delicious sweetness of the onions, but the image of a dusty track leading to tanned naked French girls lying unashamed on hot sunlit rocks rising from a cold mountain river. Château Double near Cannes was where we ate the tarts, however, it was a swim in the rock pools that had me smiling underwater, popping up like a 10-year-old seal to get another peek.
