This is a pudding of abundance, like a bountiful pirate’s chest crammed with goodies. The Bramley is great for it, its tartness counteracted by the goodies.

Ingredients

Method

Preheat the oven to 200°C/400°F/Gas 6. For the brandy butter, bring the butter to room temperature. Cream it in a bowl until pale. Beat in the sugar gradually, then add the brandy, a dribble at a time, so that it does not split.
