Ingredients

  • 2 x 10 cm (4 inch) cinnamon sticks
  • ½ nutmeg, freshly grated

Method

In a dry frying pan over a medium heat, toast the cinnamon sticks, nutmeg, black peppercorns, whole cardamom pods, cloves and allspice berries. Stir for a few minutes until they smell toasty and fragrant.

Leave to cool then transfer to a food processer with the bay leaf. Blend to a rubble. Add the sugar and whiz again. Spread out on a baking sheet to dry for a few hours, then pass throu
