Pick the clover when it is well out but before the flowers start to go brown and put with the most of the sugar in a plastic bucket. Bring the water to the boil and pour over the flowers, adding the juice of the oranges and lemons. Start the yeast to work in a glass with a little sugar and put near a radiator.
