I first met the late restaurateur Anders Ousback when he was sommelier at Berowra Waters Inn more than 20 years ago. This dish was part of a menu I prepared for Anders’ 50th birthday, which included some of his favourite dishes. My last memory of Anders comes from when I visited him the week before he died; he whipped up a pile of pikelets from
