  • 3 tablespoons fat
  • 2 cups tinned or fresh shrimps
  • ½ cup minced celery
  • ½ cup chopped green pepper
  • ½ cup chopped tinned or fresh mushrooms
  • 1 small minced onion
  • 3 tablespoons soy sauce
  • 3 cups cooked rice
  • 3 eggs
  • 3 tablespoons water


Lightly brown onion in fat. Add celery, pepper, mushrooms, and cook 2 minutes.

Add shrimps, and turn lightly for 2 minutes. Then add the rice and soy (or Worcestershire) sauce [If you use Worcestershire, make it one tablespoon, of course. Soy sauce is salty, not peppery, as is the other.] and turn until hot, or about 2 minutes.

Stir the water and eggs together, and pour into the mixture. Stir all together quickly, and serve at once.
