This is a delicious accompaniment for roast turkey, duck, goose or pork. (Pictured with Roast Pork Belly à la Anna Hansen.)


  • 700–800 g(1 lb8 oz-1 lb6 oz) kumara, skins scrubbed, chopped into large chunks
  • 3 tablespoons olive oil
  • salt and pepper
  • 3 tablespoons water
  • cup fruit mince


    Preheat oven to 180°C/350°F/Gas Mark 4. Line a roasting dish with baking paper and add kumara, oil, salt and pepper. Mix together and then pour on the water. Roast until kumara are almost cooked. Gently mix in fruit mince. Continue cooking until kumara are done.
