700–800g(1lb8oz-1lb6oz) kumara, skins scrubbed, chopped into large chunks
salt and pepper
Preheat oven to 180°C/350°F/Gas Mark 4. Line a roasting dish with baking paper and add kumara, oil, salt and pepper. Mix together and then pour on the water. Roast until kumara are almost cooked. Gently mix in fruit mince. Continue cooking until kumara are done.
