Not to be confused with another popular cake - Apple Strudel - ‘streusel’ is German and literally means ‘to scatter’. The streusel refers to the topping, which is scattered over the cake to create a super-crunchy finish, a little like a British crumble (see Rhubarb Crumble Cake). This lovely aromatic cake works just as well as a dessert, too - bonus.
