Method

Put a small fresh chicken in a pan, cover with cold water, and add 1tsp each of salt and peppercorns, a bayleaf, a peeled whole onion with a couple of cloves nailed into it, a carrot thickly sliced. Bring to a gentle simmer, taking care not to let it boil, and cook for half an hour, covered, on top of the stove. Take out the chicken, which will be good for other recipes, and discard the vegetables and bayleaf.
