Joyce’s first experience of tarragon and chicken was at the Hole in the Wall, in Bath when she cooked with the legendary George Perry-Smith. He would roast a chicken and scent it with lots of tarragon, then finish it with a butter and cream sauce, in the Elizabeth David style.
