You will need two large pieces extra-width foil and one large roasting tin. Pre-heat the oven to gas mark 3/160C/325F.
Check with the curer whether it is very salty and will need a soak. (Ramsay’s ham is mildly salted and does not need to be soaked.) Soak the ham in a large bucket or basin (or the bath if necessary
