I had these marvelous crisp little cylinders for breakfast at Las Brisas de Papaloapan, a restaurant overlooking the massive Papaloapan River in the gentle, brightly painted colonial town of Tlacotalpan. They’re what diners in restaurants here usually call flautas. The conventional wisdom is that such fried tortilla-wrap specialties are best when served piping hot. But the ones at Las Brisas arrived at room temperature, by either intention or circumstance, and I thought they were just right
