The famous chipotle chiles of veracruz are called chiles capones, or “capon chiles,” when prepared for stuffing by removing their seeds and veins. The name comes from the fact that this “neuters” their heat. They can still be pretty hot, but the sting is softened.

Restorán Doña Josefina, in the picturesque town of Naolinco, makes one of my favorite chiles capones dishes, an appetizer featuring the endlessly useful Mexican chopped meat mixture known as picadillo.
