Masa reconstituted from packaged mixes is acceptable for most uses, though it will never be as good as true masa made at home or bought from a Mexican tortillería. As I explain, people commonly if incorrectly lump together all brands under the name of “masa harina,” which was invented by the Quaker Oats Company. When Mexican home cooks use the instantized product, they generally reconstitute it with water. I often use chicken stock instead, to give the resulting masa-equivalent a lit
