This Version of gorditas infladas, from tomasita Meléndez at Brisas del Mar in Boca del Río, has beans mixed into the dough. The flavor is close to that of the gorditas, but a little earthier, and the color is dusky from the black beans. If you can make up a batch of each kind at the same time, they make a delightful picture together on a plate.
