I had this vibrant dish at el quelite in misantla. Like Fried Fish with Fried Slivered Garlic, it depends on mighty quantities of garlic, this time in pureed form. It’s a good light lunch or supper dish, and it also makes an elegant appetizer.

Ingredients

  • 8 large garlic cloves
  • ¼ cup water
  • 8 blue crabs, cleaned and cut in half

Method

In a blender or food processor, thoroughly puree the garlic with the water. Set aside.

In a mixing bowl, toss the crabs with the salt. Set them aside to absorb the flavor while you heat the oil in a large, heavy skillet over high heat until rippling. Add the crabs and cook, turning once, until they are bright red and cooked through, about 2 minutes per side. Add the garlic puree. It sho
