Candy made with piloncillo, the unrefined Mexican brown loaf sugar, doesn’t behave exactly like its counterparts made with white sugar. The sugar syrup will look very different at all the cooking stages. But the flavor of piloncillo makes conventional sugar candy seem dull. This delightful example has a caramel-like consistency and an unusual textural interest from the combination of crushed pepitas (pumpkin seeds) and sesame seeds.
