When most people think of an Eastern European ‘salad’, they tend to imagine something covered in mayonnaise. Although the Baltic States have moved away from this older style of cooking somewhat, mayonnaise remains popular. Of course you could buy good-quality mayonnaise, but I find the best way of elevating a dish is to make your own (just leave out the chives).
