Rye bread is the most popular bread in the Baltics, due to the grain growing so well on Baltic soil. In each country it tastes slightly different, though; Estonia, for instance, has its own special black bread called leib. I always use wholemeal rye flour for my bread; you can buy it from supermarkets these days, but I like the dark rye flour from bakerybits.co.uk.
