Press and roll the citrus fruit firmly against the work surface to loosen the membranes holding the juice, then cut the fruit in half crosswise. For small amounts of juice, use a citrus reamer to pierce the membranes as you turn and squeeze the fruit. Catch the juice in a bowl and strain it to remove the seeds. For larger amounts of juice, use a citrus press or electric juicer.
