Peeling & coring pears

Holding the pear at a slight angle and starting at the stem end, use a vegetable peeler to remove strips of peel, rotating the pear until all of the peel is gone. Halve the peeled pear lengthwise. If desired, rub the flesh with a cut lemon to prevent browning. Use a melon baler to scoop the seeds from a pear half and to create a shallow channel from the core to the stem. Repeat with the remaining half.
