Using a paring knife, cut around the whole cherry to cut it in half. Rotate the halves in opposite directions to separate them. Use your fingers or the knife to pry the pit from the cherry. To pit a cherry using a cherry pitter, position the cherry, stem side up, in the cradle of the pitter. Hold the pitter over a small bowl and press down, ejecting the pit into the bowl.
