Preheat the oven to 350°F (180°C). Place the pits on a rimmed baking sheet and bake for 10–15 minutes. Remove from the oven and leave the oven on. When the pits are cool enough to handle, remove the inner kernels: Grip each pit with pliers so that the edge is visible above the pliers. Hit the edge of the pit with a hammer until the pit cracks open and the kernel can be removed intact. Place the kernels on the baking sheet and roast for 5 minutes.
