Try to buy organic, unwaxed citrus fruits if you plan to use the peel. To finely grate zest, use a microplane or rasp-style grater that is designed for zesting citrus. A cocktail citrus zester is perfect for removing long, thin curls of zest. A vegetable peeler or paring knife works well for removing long strips of zest. Always use the colored part of the peel, avoiding the bitter white pith.
