A carne asada is not complete without the smoky and sweet subtle flavor of any variety of a charred green onion. Always buy more than what you think you will need, because they are so delicious they are often the first item to run out. A small bunch is usually enough for two people. They do well under low and slow cooking on the edges of the grill, so don’t take up any vital space during peak heat that can be used for meat. Look for green onions that do not have any brown edges or sagging green stalks.
