Spanish chorizo is probably the variety that most people are used to eating. It is made out of pork and seasoned mostly with pimentón (paprika). It is cured and ready to slice and eat, though you can also fry it a bit to render its savory paprika flavor into other foods like our Frijoles Charros, potatoes, or any stew.
