Mexicans love eating lamb. Lamb shoulder is a lean cut meant for long-term cooking and benefits greatly from being slowly braised or stewed under low heat. In Mexico, you’ll usually find it braised or roasted in barbacoa form. In the United States, lamb is not as popular as beef, but it is incredibly satisfying when you are craving red meat and want something a little different. It is usually imported from New Zealand or Australia and tends to be pasture-fed, which explains why the flavor can be strong-tasting to some. When buying lamb, look for meat that is dark pink with layers of creamy white fat.
