Rice vinegar, traditionally made through a long fermentation process with just rice, water, and yeast, now commonly starts from rice wine and other alcohol. Though less complex in flavor than its predecessors, rice vinegars today still have a pleasant, tart-sweet flavor, and relatively low acidity. Different countries produce slightly different varieties to best suit their cuisines. A good Japanese rice vinegar is your best bet for an all-purpose variety. Rice vinegar is available in most major supermarkets.
