Prized for its nutty taste and high cooking temperature, sesame oil is ideal for stir-fries and dressings. The quality differs dramatically so look for ‘pure sesame oil’ instead of blended. If it’s pale in colour, chances are it’s not 100 percent sesame, so choose the darker coloured ones. It’s best to buy small bottles as the aroma dissipates quickly. If you have room in your refrigerator, store it there.
