Rock Sugar

These Chinese yellow-hued chunks of sugar are made by crystallising sugar. When boiled down, rock sugar adds a sticky texture and red colour to meats like char sui pork. You can substitute regular caster sugar, but it’s not quite the same. Before heating, crush the sugar up in a mortar and pestle so it melts faster.
