Coconut flesh that’s finely shredded and dried is called desiccated. It’s also sold in bigger pieces, which are known as coconut flakes. Sprinkled into curries, salads and sweets, it imparts an exotic taste. Be sure not to buy sweetened coconut, which is purely used for baking.
