Also called Thai chilli jam or paste, this roasted chilli sauce is made from chillies, shallots, garlic, tamarind and shrimp paste. It’s the quintessential taste of tom yum soup and is extremely useful for quick Thai stir-fry sauces. Keep refrigerated once opened and dollop it into soups, curries or peanut sauces.
