A spicy Thai red chilli sauce made from finely blended chillies, sugar, garlic and vinegar. Used as a dipping sauce, for making spicy mayonnaise, blended into stir-fry sauces or spooned over bowls of noodle soup, it’s a firm fixture in many people’s refrigerators around the world. It’s extremely spicy, so if you’re using it as a dipping sauce, mix it with some rice vinegar to temper its heat.
