Both the Chinese and Thai refer to regular soy sauce as light or thin soy. It tastes saltier than Japanese varieties, which brand ‘light’ as a reduced-salt version. Use light soy sauce for all types of cooking, such as dressings, marinades, stir-fry sauces and braises.
