One of Thailand’s secret sauces, this is made from fermented soya beans, salt and sugar. Although it doesn’t list MSG as an ingredient, it has ‘flavour enhancer’, which might explain the umami boost when used in stir-fries. Think of it like Worcestershire sauce – it makes everything taste good. It can be used as a vegetarian or vegan alternative to fish sauce.
