A sticky Korean chilli paste sold in plastic tubs, gochujang has a thick, glossy consistency. Its ingredients include red chilli powder, rice powder, sugar and fermented soya beans. Mixed with rice vinegar and sugar, itβs the mouthwatering sauce for bibimbap and Korean fried chicken.
The complex sweet-and-spicy flavours complement stir-fries, noodles, stews and soups, but itβs also dazzling mixed into mayonnaise for burgers and tacos or drizzled over fried food.
