Yellow Soya Bean Paste

Made from soya beans, wheat and salt, this brownish paste is used in the famous Zhajiang mian โ€“ minced (ground) pork noodles. Its salty depth is also good mixed into dipping sauces or in red braised meats or poultry. You could substitute pale miso paste (shiro) if you canโ€™t find it.
