Blitzed into Chinese XO sauce, pounded into Thai green papaya salad, boiled into a Korean soup or whizzed into Malay curry pastes, dried shrimp feature prominently in Asian cooking. Tiny sweet fresh prawns (shrimp) are sun-dried until shrunken and then packaged in an airtight bag. Once opened, place in a tight-fitting lidded jar to contain lingering odours in your refrigerator.
