Oyster juices are simmered and caramelised with the addition of sugar, soy and cornflour to produce this glorious sauce. Stir-fry sauces take on an extra depth of flavour from its salty-fishy aroma and it’s perfect in glazes and BBQ sauces. Look for a good brand like Thai Maekrua, which is brewed with fresh oyster juices, versus other artificially manufactured bottles.
