The Chinese name for this dark, smoky tasting vinegar is Chinkiang. A very important ingredient in Asian cooking, it’s hard to replicate its unique character. Made from black glutinous rice, it adds a tangy, sweet malt flavour to dressings, noodle dishes, dipping sauces for dumplings and braises.
